Head Chef | Panorama Restaurant
We are currently recruiting for a Head Chef for the Panorama Restaurant at The Europe Hotel & Resort, situated in the heart of Killarney and is regarded as one of the most luxurious resorts in Ireland.
Duties:
- Creating Menus and Executing Dishes to the a 5 star luxury standard
- Understanding the business operations inside the hotel
- Ability to motivate the entire kitchen team and create professional relationships with all kitchen staff
- Creativity to produce new recipes from scratch
- Work within the framework of the company in regards to Food Costs and Staffing Levels
- Organize the Ordering and Storing of Food Items
- Communicating with suppliers on a daily basis
- Understanding, Operating and Overseeing the HACCP system within the Hotel
- Communicate and Liaise with other staff members and Management of other departments
- Solving Problems within the department in a calm and productive way with the ability to manage staff problems in an appropriate manner and follow Company policies
- Enforcing Company policies
- Preform HR duties with employees within the department
- Keeping Calm under Pressure and comfortable dealing with Large Quantities of Guests in regard to A La Carte & Function Business Service
- Leading by example in how we deal with each other, our customers & our suppliers
Requirements:
- Supervise the day-to-day operation of All Kitchen Employees, Facilities and Costs to Maximize the overall F&B departmental profit
- Ability to Liaise with Suppliers in regard to Delivery Schedules & Requirements in Quality/Quantity and Waste Management
- Collaborate with Executive Chef to keep Menus seasonal and the quality consistent
- Work with all chefs to Plan Menus A La Carte Restaurant & Functions
- Organize Banquets and Buffet Business for Large Numbers of Guests
- Communicate with all chefs in regard to Stock Levels of dry food and fresh food
- Produce required Dishes following Specific Recipes
- HACCP Training Level 1 & 2 is Essential and proof of certification will be required
- Complete weekly HACCP Records and Coordinate with the kitchen staff to fulfil their duties to comply with the HACCP Plan in the Hotel
- Knowledge of all Allergens and the Updating of the Allergen Folder when the Menu changes
- Minimize Waste and Control the Recycling & waste management
- Coordinate all chefs in relation to the Cleaning Schedule
- Management of Kitchen Porter Duties - including Kitchens, Corridors to the Kitchen and Changing/Toilet Facilities for the Panorama Kitchen
- Impeccable personal, professional presentation at all times
- Ensure the Cleanliness & Maintenance of Kitchen Equipment
- Communicate with the Executive Chef & Head Chef Brasserie about Main Cleaning Schedules
- Knowledge of Appropriate Use and Maintenance of Equipment in a Proper and Safe Manner
- Participate in Cost Control and Stock Taking
- Provide Incentives for Staff Members to Raise their Level of Motivation
- Good Knowledge of Microsoft Office is preferrable
- Ability to work with Essential Software Programs within the Kitchen Department, including Micros & Time and attendance recording System
- Controlling Staffing levels & rosters as well as creating weekly rotas
- Abide by the Code of Conduct laid out by Liebherr International
- Knowledge of popular and upcoming food trends in the fine dining market
